Trip To Las Vegas

My son is thinking about attending the Culinary Institute of Las Vegas when he graduates high school. Does anyone know anything about this school, such as:

Is it respected?
Will he be able to get a job when he graduates?
How are the instructors/administration?

I want to make just 3 days tour to Las Vegas & Grand Canyon.

Can some one tell me
- is 1 day good enough in - Grand Canyon
- are there guided tour for a day in Grand Canyon
- We plan to start from SaltLake City on Friday afternoon / eve by Bus and reach back on Monday evening by Bus. We will not be driving for some reason. What are the best options?
